There are literally thousands of games like that

Basically a game where you play the mad scientist role. You have a big old manor up on a hill overlooking a small village. You have a basement lab where you perform hideous trespasses into God's territory. The village cemetery provides raw materials for your abominations. The village itself provides live victims for your experiments so it's in your best interest to keep it a quaint picturesque little hamlet that draws in a good number of new victims residents to replace the ones that have...um...gone to visit distant relatives. If you "over-harvest" or too many scary things start roaming the countryside, the villagers will flee, depriving you of research subjects.

You have to discreetly dispose of leftover "materials" and "failed" experiments. You have to keep your creations from escaping. You have to keep out or capture nosy peasants who go snooping around your lab. You have to stay on good terms with the local officials. In short, you have to carry on your ungodly work without arousing suspicion. You must temper your lust for knowledge with caution, lest the people come after you with torches and pitchforks.

And of course, you have to make money to fund your research.

If there isn't a game like that, there should be.

For example, that description is word for word pretty much exactly how I play the Sims.
