Sauce didn't thicken up enough but delicious.
Mix some corn starch and water together and then dump that in next time.
Tapioca flour works better than corn starch, but who has tapioca flour hanging around?

They used it for both but you're right, the cooks would reduce it for sauce -nt-

Teriyaki sauce is pretty simple to make if you have the ingredients.

I usually use a 1:1 of soy sauce and sake, a bit more sugar, and skip the mirin
